More than anything Mothers want recognition of the amount of work they do and their vital role in the family. People might say about a man, “He’s a good provider,” but do they say about his wife, “She keeps her kitchen floor clean and makes sure there is always toilet paper in the bathroom.” Sure both parents do plenty of boring, dirty tasks, but this week it’s all about Mom.
Traditionally, fixing breakfast would have been one of Mom’s tasks. Which is probably why fixing her breakfast in bed on Mother’s day has become such a staple. And there’s nothing wrong with it. (Except the “bed” part, what a mess.) So first of all, it’s always good if you know what type of food she might like, and when she might want it. If she always goes out running at the crack of dawn or if she likes to sleep in when she can, maybe a brunch would be good. Whatever you do, do the dishes. Ideally, Mom’s should do no dishes at all on Mother’s day.
There’s nothing wrong with flowers and chocolate, but Mom’s really cherish something made for them by the people they love. So get out the paper and markers, make some homemade cards, and serve her something special to eat that you made by yourselves.

Is your Mom a chocolate fanatic? Try this instead of coffee.
Extra Chocolaty Hot Chocolate
(makes 4 servings, or 2 depending on how much of a fanatic she is)
2 1/2 cups whole fat milk
1/2 cup unsweetened dark cocoa powder
1/2 cup heavy cream
1/2 cup semi-sweet chocolate chips, or chopped dark chocolate
1 teaspoon vanilla
sugar to taste (maybe 1 Tablespoon per cup of milk)
Heat milk in a medium saucepan, do not let it boil. Add cocoa powder and whisk until combined and lump free.
Reduce heat to medium low, add chocolate chips and heavy cream. Continue to whisk gently until chocolate is melted and everything is hot.
Add sugar one Tablespoon at a time, whisking after each addition. Pay attention to how many Tablespoons you like, the next time you make it you can add that much sugar to the milk while it’s heating.
Top with whatever your Mom likes, marshmallows, whipped cream, whipped cream with chocolate syrup drizzled over——
This is a rich concoction, serve it in small cups and sip slowly.
Add 1 teaspoon of espresso powder or 1 Tablespoon strong coffee. Espresso powder is not available in the quad-cities, order on line from Williams Sonoma or Amazon. It is not the same as instant espresso, although in this recipe you could probably substitute it.
On top of the marshmallows or whipped cream try—

Think Eggs Benedict is too complicated? Repulsed by poached eggs? Try Mock Eggs Benedict. This starts with fluffy scrambled eggs, so if you have trouble making them fluffy, see the tips below or watch the whole procedure here.
How to make Fluffy Scrambled Eggs
Mock Eggs Benedict
Makes 2 to 4 servings.
This has 3 parts, 2 lightly toasted English muffins, buttered, fluffy scrambled eggs with bits of browned ham (or bacon bits,) and mock hollandaise sauce.
1/2 cup ham, diced or cut into baton (like a long dice)
2 English muffins, split
salt and pepper
1/2 cup mayonnaise
1/2 cup sour cream
1 teaspoon lemon juice
1 teaspoon mustard, yellow or Dijon. (or to taste)
1/2 teaspoon paprika or 1/8 teaspoon cayenne (optional)
4-5 large eggs, depending on how high you want to pile them (each muffin half will take 1 egg)
First, put a little oil or grease in a small skillet and brown ham bits, set aside.
Second toast your English muffin halves (English muffins are traditionaly toasted only on the cut side. Careful broiling can help you here) butter them well, place each on a medium sized plate, set aside in a warm place.
Third, make the mock hollandaise dance. Mix mayonnaise, sour cream, lemon juice, mustard and ground pepper (red and/or black) in a small saucepan. Heat on low until warm.
Now scramble your eggs. Use a non-stick skillet. Put in a Tablespoon or so of butter and melt it over low heat. That is one of the tricks which will lead to fluffy scrambled eggs, only use low heat. Crack your eggs into a medium/large bowl. Mix until there is no difference between whites and yolks. Add a pinch of salt and a little black pepper.
Add egg mix to skillet. Now wait. when edges are just set, use a silicone scraper to pull the edges toward the middle. Never stir. Continue gently dragging the edges to the middle. When most of egg is cooked, but very soft and a little runny, begin moving with a folding movement, turning over big sections to make sure they are not too runny. Stop cooking just before eggs are done. They will continue to firm up as they sit in the pan.
Retrieve your muffin halves, put some ham on each half. Place 1/4 of the eggs on each one. Spoon some warm mock hollandaise over each one, and serve.
It is nice to have some fruit with this, chunks of fresh pineapple, cut up cantaloupe, a bunch of grapes…
If you’d like to try the classic Eggs Benedict, this will show you how:
Had enough of rich fare? These oatmeal based breakfasts are both healthy and very easy. Even very young children can help. And Mom doesn’t have to get up at any set time, because they are started the evening before and finished in a minute or two.
1/3 to1/2 cup old fashioned or extra thick oats
2/3 to 1 cup milk, or coconut milk or almond milk, or soy milk. Works great with any. Or try orange juice or some other juice. If you are not using chia seeds, reduce liquid to lesser amount.
1 teaspoon chia seeds (optional)
Extras (and the fun is in the extras)
1 5 oz carton greek yogurt
1/3 cup cut up fruit, any fresh fruit, or frozen fruit which has been placed in the fridge overnight
Optional—a handful of granola, a few chopped nuts or some bran flakes, or maybe chocolate chips or sprinkles. Let your imagination run wild!
Use a jar or other container with a screw on lid. Mason jars are classic (wide mouth pint size) but I use empty Talenti Gelato containers.
Place oats, liquid, and chia seeds if using in your container. Secure the lid and shake well. Chia seeds do add nutrition, but some people don’t like them. If you’ve never used them, Sprouts has them in the Bulk Foods section, so you can just buy a Tablespoon or two.
Place container(s) in fridge for at least 3 hours (six if you’re using chia.) When you are ready to serve, stir well, add yogurt and fruit plus toppings. Eat! If you’d like to be more elegant, spoon oat mix into a bowl, then add toppings as desired.
My favorite—thick cut oats, coconut milk, coconut yogurt (or for a real treat coconut cream) and pineapple, maybe a few blueberries.
Egg dishes seem to be at most Mom Day brunches. Here some that looked good and not too hard. Remember, part of the goal is for Mom not to wash any dishes. I’m positive she’d rather have a simpler meal and a clean kitchen.
