Isn’t it lovely to have the rain & snow? Cool weather is the perfect companion for crockpot meals, chili and soups. It’s also a great time for homemade breads, cookies and other oven goodies.

What’s for Dinner?

We’ve provided 6 Menu Starters for you, based on the items being offered for sale in local stores. Menu Starters are kind of the bare-bones menus - with lots of flexibility for your own ideas and inspiration. Don’t like our suggested recipe? Use your own. Does your family eat bread at every meal? Then add bread if you like. Perhaps you need more than soup at a meal. Add a salad or a side dish. What about dessert? Go for it! It’s all up to you.

What to do on Day 7? That’s a great day to catch up on derivatives, go out to eat or maybe just bring home a pizza. 

When you plan your weekly meals, be sure to consider these things when organizing your meals:

  • Activities and schedules 
  • If you need ingredients from one meal for another
  • Dietary requirements
  • The menus here can be used on any day, except Day 6 needs to come after Day 5 to take advantage of derivatives
  • These are just suggestions! Mix and match, substitute, make it your own.

Day 1

Chili Bar 

On the side: Chopped tomatoes, grated cheese, cut green onions, sliced black olives, cilantro sprigs, tortilla chips

Cornbread with honey butter

Recipe: Honey Butter

1 stick of butter, softened
2-3 TBS of honey

Combine ingredients and stir until well blended. Can add a bit of grated orange rind if you like. Refrigerate until ready to use.

Day 2

Slow Cooker Lemon Garlic Chicken

Wild Rice & Vegetables

Fruit salad 

Recipe: Wild Rice & Vegetables

Olive oil
2 cloves garlic
1/4 cup chopped onions
1/4 cup finely chopped carrots
1/4 cup finely chopped zucchini
1/4 cup sliced mushrooms
Optional (for a sweeter flavor): 1/4 cup cranberries, 1/4 c. chopped apples, 1/4 c. finely chopped pecans
6 cups chicken stock
3 cups mixed brown rice (I use a combination of long and short, and include about 1/4 c. wild rice)

Saute’ onion and garlic in olive oil in a very large skillet. Add carrots, zucchini and mushrooms, saute’ until nearly tender. 

Add chicken stock, bring to boil. Stir in rice. When chicken stock returns to boil, cover tightly. 

In our high altitudes, it is likely to take an hour or more to cook. Try not to lift the lid (use a glass lid if you have one).  If it appears that the liquid is out before the rice is done, add more stock or water.

Cook until the rice is at desired softness. This makes a LOT. You’ll have at least enough for a couple of meals. You might even want to cut the recipe in half.

Day 4

Pork Chops with Sweet and Sour Peppers

Poached Pears

Recipe: David’s Simple Poached Pears

You can make very fancy poached pears for a touch of elegance if you like, (Giada Poached Pears or Poached Pear “Belle Helene” - Vanilla-Poached Pears with Chocolate Sauce) or try out our simple, but delicious version that makes a wonderful side dish or dessert. 

4 Cups Ginger Ale (use diet if watching your sugar)
4 Pears, quartered with core removed; Peeled if desired.
2 Cinnamon sticks
4 or 5 whole cloves
3 or 4 slices of peeled fresh ginger, optional
Whipped cream or vanilla ice cream, optional

Pour Ginger Ale into skillet. Add quarters of pears, cinnamon and cloves, and the optional ginger, if you’re using it. Let simmer for 1/2 hour or more until pears are tender. Serve warm or cold, top with whipping cream or ice cream if using as dessert.
