Are you getting the most from your time and effort in the kitchen? Lately I’ve been coming across some helpful kitchen tips.

When it comes to making the most of your time, experts like Alton Brown and The Food Lab agree that the two most important tips are:

  • First, if you are preparing a new recipe, read the whole recipe first, perhaps even highlighting or underlining such critical points as the pre-heating temp., or any sifting or chopping that needs to be done. Pay attention to the order in which steps need to e taken.
  • Second, make sure your knives are sharp. The recommended sharpening schedule is twice a year, more if the knife is heavily used. You should have a steel or ceramic sharpening device and use it regularly between sharpening to keep the knife edge clean and properly aligned. Sharp knives will make your prep easier, and are actually less likely to cut you. Most knife cuts while cooking are caused by the knife slipping.

Techniques can pop up anywhere. This one for simple poaching of eggs recently came to my attention while looking for something else on you tube. If you like pretty, and simple, this should work for you.

Perfect Poached Eggs

Part of good cooking is keeping your tools in good shape. This tip about nonstick cooking pans came from Farberware. They say you should not use cooking sprays on non-stick surfaces. The oil in the spray will burn at cooking temperatures and cause a sticky residue on the surface. Not what you want on non-stick pan. Farberware recommends that if you want to add a little oil to the pan, put a small amount on a paper towel and rub or dab it on the pan.
