Fresh Fruits Are Abundant Now - Hooray!

How many ways can you use fresh fruits in your summer diet? Of course there are fruit salads and fruit plates. Many salads benefit from the addition of melon, berries or chunks of nectarine or peach. Grapes make a great snack. Blueberries are wonderful on your breakfast yogurt or cereal. And then there are deserts—everything from peach pie to raspberry mousse. Fruits are low fat, but high flavor. So search out the ripe fruits of the season.

Classic Bolognese Sauce

Make twice as much. Freeze the rest for later.

Quick & Easy Bolognese Sauce

Mom’s Really Fast Spaghetti Sauce Bolognese Style

Can be prepared ahead, refrigerated, then served up after the concert, play, soccer game, wrestling match...

You will need:

1 lb ground beef
1 small onion finely diced
10 baby carrots finely diced
2 stalks celery finely diced (or pulse each veggie separately in a food processor)
2 cloves garlic, grated, finely diced or pressed
1 jar of your favorite commercial Pasta Sauce.

Optional

5 or 6 large fresh Basil leaves
8 oz fresh mushrooms, sliced sautéd at high heat in a separate skillet

Stir your meat and chopped onion, garlic, celery & carrots around in a heavy pot until the meat is browned and veggies are softened. Add 2 cloves finely diced or pressed garlic and stir briefly. Add pasta sauce. Heat through and let simmer 10 minutes or so. Add optional basil and/or mushrooms. Stir in then remove from heat. 

Serve with your favorite pasta. (Did you know you can cook pasta ahead, stir in some olive oil, refrigerate in bowl or plastic storage bag and rejuvenate by dumping briefly in boiling water. )

Grilled Corn, India  Stye

This is Indian Street Food. They use unripe field corn. 

You will need:

Ears of corn, husk and silk removed, leave on any long stalks.
limes, quartered
Dash of salt, your choice what type, Himilayan pink is nice.

A grill, gas works fine and so does charcoal.

Grill your corn ears, turning frequently. The long stalks will help, as would a heat proof glove. The corn is done when it changes to a slightly darker color and some of the kernels are browned.

Serve hot with the lime quarters and salt handy. Each person should take a lime quarter, dip it in the salt dish and rub the salted lime on the corn up and down until the lime juice salt mixture coats the corn. The good thing about this is the low fat content. And the taste.

Classic Technique. The watermelon effect is cute, but not necessary. You could use any combo of ice creams and sherbet, sorbet or gelato. It’s hard to do more than 3 layers, and you could do just two. How about Chocolate Ice Cream filled with Raspberry Gelato.
